In Morocco we have the famous harissa, which looks like the shatta, but contains different ingredients and requires different technique. Add the onion and cook for 5 minutes, until softened and lightly browned. With a peeler or paring knife, remove the peel and white pith from the lemon, leaving just the flesh.
